During our stay, we enjoyed a 630 sq. ft. ground-floor patio casita with an interior wood-burning kiva fireplace, a deep soaking tub, heated floors, and even an exterior fireplace on the furnished patio. Dining at Terra Restaurant
On top of all of the luxurious surroundings we found at the Four Seasons Resort Rancho Encantado Santa Fe, our taste buds were dancing for joy as we sampled the contemporary Southwestern cuisine of Executive Chef Andrew Cooper.
With more than 20 years of experience from around the world, Chef Andrew Cooper’s resumé pays tribute to everything from the classic to avant-garde. A graduate of the esteemed Culinary Institute of America, Chef Cooper brings more than 12 years of Four Seasons experience to his role as Executive Chef at Four Seasons Resort Rancho Encantado Santa Fe.
Before arriving in Santa Fe, Chef Cooper was the the Executive Sous-Chef at Four Seasons Resort Hualalai in Hawaii where Chef Cooper learned and began to truly understand the importance of sustainable cooking. He worked with an array of local growers and farmers to craft farm-to-table dinners and traditional luaus, and spent weekends combing the farmer’s markets for the season’s freshest offerings.
Prior to that, he was Senior Sous-Chef at Four Seasons Hotel Westlake Village, in Southern California. In this role, he learned the nuances of cooking healthy cuisine that still satisfies, and the importance of using top-quality ingredients. Prior to his time in California, he served as Sous-Chef at Four Seasons Hotel New York. Chef Cooper credits this time as feeding the indulgence side of his culinary education, and learning the simple pleasures of rich, elegant ingredients.

As you can see, my trusty Nikon was very busy photographing all of these beautifully prepared dishes. In fact, it’s near dinner time as I’m writing this, and I’m having a hard time staying focused on my writing. All of the dishes were fabulous, but the Pinon Smoked Quail was a real standout for me. Yum! Yum! Yum!
Oh how I wish Star Trek’s Scotty could beam me to the Four Seasons Resort Rancho Encantado Santa Fe right now. I sure would like another sampling of Chef Cooper’s cuisine.
